Ingredients:
Fujian Province, China: Organic Shui Hsien Oolong tea
Rock oolongs, sometimes called "Cliff teas," come from a small region in norther Fujian province. Fujian is justly famous for its vash array of wonderful teas. Within Fujian, this small area is without peer in its production of exquisite Oolong teas. Plucked only once each spring, the quantities each year are small; in addition, the vagaries of weather may shrink the already limited window of time for plucking and processing. The Chinese term for Rock teas, "Yien Cha" is made up of two characters: "mountain" and "rock."
The Wuyi Mountain area in northern Fujian is well known for its magnificant rock vistas; boulders seem to be balanced atop one another, while others emerge from green bamboo groves overlooking bubbling brooks and streams. Now identified with superb Oolongs, the Wuyi region is the source of great, albeit costly, teas that make for awesome tasting.
Hot tea brewing method:
Oolongs teas are best enjoyed when the leaves are briefly infused with hot water which is then poured off. The tea is then reinfused and tea is poured to the lucky guests after about 1 minute. The leaves may be reinfused several times, with each resulting infusion yielding a different liquor from the proceeding cup.
